Our Sponge Cake Blend is the perfect premix for your gluten free sponge cake. Produced from ingredients such as rice flour, tapioca starch and maize starch, this blend is gluten free. Thought to be one of the first of the non-yeasted cakes, the first sponge cakes were like thin, crisp cakes, similar to the modern cookies we know today.
